INGREDIENTS
4 oz Lean Sirloin Steak
1 Whole Wheat Tortilla
1/2 cup Red Bell Pepper (sliced)
1 oz Reduced Fat Cheddar Cheese
1 tbsp Fresh Lime Juice
1/2 tsp Cumin
1/2 tsp Chili Powder
1 tbsp Fresh Cilantro
PREPARATION
Thinly slice the lean sirloin steak and place it in a bowl.
Add the fresh lime juice, cumin, and chili powder to the steak, and mix well to marinate for at least 15 minutes.
While marinating, slice the red bell pepper into strips and roughly chop the cilantro.
Heat a non-stick skillet over medium-high heat and sauté the bell pepper strips for 2-3 minutes until slightly softened.
Add the marinated steak to the skillet and cook for about 3-4 minutes per side until desired doneness is reached.
Remove the steak and peppers from the skillet. On one side of the whole wheat tortilla, layer the steak, sautéed peppers, reduced fat cheddar cheese, and a sprinkle of cilantro.
Fold the tortilla in half and return it to the skillet over medium heat. Cook for 2-3 minutes on each side until the tortilla is golden and the cheese melts.
Cut into wedges and serve warm.
