INGREDIENTS
4 oz Chicken Breast
1 cup cooked Whole Wheat Pasta
1 tbsp Pesto Sauce
2 tbsp Low-Fat Cream Cheese
1/4 cup Fresh Basil Leaves
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
- Bring a pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- Season the chicken breast with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook the chicken for about 5-6 minutes per side until fully cooked and golden on the outside. Once done, slice or cube the chicken.
- In the same skillet, lower the heat to medium and add the pesto sauce along with the low-fat cream cheese. Stir to combine creating a creamy pesto sauce.
- Add the cooked pasta and chicken back to the skillet, tossing well to ensure everything is evenly coated in the sauce.
- Mix in the fresh basil leaves and adjust seasoning with salt and pepper as needed before serving.
