INGREDIENTS
4.5 ounces Salmon Fillet
1 cup Broccoli
1 tsp Olive Oil (for broccoli)
1 medium Sweet Potato
1 tsp Olive Oil (for mash)
3 oz Non-fat Greek Yogurt
1 clove Garlic
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Toss the broccoli with 1 tsp olive oil, salt, and pepper, then spread it evenly on a baking sheet.
Roast the broccoli in the oven for about 15-20 minutes until tender and slightly caramelized.
While the broccoli roasts, peel and dice the sweet potato. Boil in water until soft, about 15-20 minutes.
In a small saucepan, lightly sauté one minced garlic clove in 1 tsp olive oil until fragrant.
Once the sweet potato is soft, drain and mash it with the sautéed garlic and 3 oz non-fat Greek yogurt. Season to taste with salt and pepper.
Heat a non-stick skillet over medium-high heat. Season the salmon fillet with salt and pepper.
Sear the salmon for about 3-4 minutes per side (or until it reaches your desired doneness).
Plate the seared salmon alongside a serving of roasted broccoli and a generous scoop of garlic sweet potato mash.
Serve immediately and enjoy your nutritious, flavorful dinner.
