100 g Baby Potatoes
1 tsp Unsalted Butter
0.5 tbsp Olive Oil
1 clove Garlic
1 sprig Fresh Rosemary
1 sprig Fresh Thyme
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C) for the roasted potatoes.
Wash the baby potatoes and cut them in half. Toss with olive oil, a pinch of salt, and pepper, and spread evenly on a baking sheet. Roast for 20-25 minutes until tender and lightly crisp.
While the potatoes are roasting, take the sirloin steak out of the refrigerator to come to room temperature. Pat dry with paper towels and season generously with salt and pepper.
Heat a skillet over medium-high heat. Once hot, add the steak and sear for about 3-4 minutes on each side for medium-rare (adjust the time to reach your desired doneness).
