Enjoy these wholesome, crispy cauliflower gorditas filled with a savory black bean mixture. A blend of tender cauliflower, hearty black beans, almond flour, and egg come together to create a satisfying base, topped with a sprinkle of low-fat cheese and a dollop of nonfat Greek yogurt for a refreshing finish.
INGREDIENTS
200g Cauliflower
1/2 cup Canned Black Beans
1/4 cup Almond Flour
1 large Egg
1 oz Shredded Low-Fat Cheese
1/4 cup Nonfat Greek Yogurt
1 tsp Garlic Powder
1 tsp Ground Cumin
Salt and Pepper to taste
2 sprays Olive Oil
PREPARATION
Preheat your oven to 425°F and line a baking sheet with parchment paper.
Steam or microwave the cauliflower until tender (about 5-7 minutes), then allow it to cool slightly.
In a large bowl, mash the cauliflower lightly with a fork to create a chunky texture.
Add the almond flour, egg, garlic powder, cumin, salt, and pepper to the mashed cauliflower. Mix until well combined.
Fold in the drained black beans, gently mashing them to partially incorporate into the mixture while leaving some texture.
Form the mixture into 4 patties (gorditas) and place them on the prepared baking sheet. Lightly spray the tops with olive oil.
Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the patties are golden and crispy.
Once baked, top each gordita with shredded low-fat cheese and return to the oven for 2 minutes until the cheese slightly melts.
Serve the gorditas warm with a dollop of nonfat Greek yogurt on top.
