INGREDIENTS
4 oz Chicken Breast
1/2 cup Whole Wheat Pasta (cooked)
1 cup Mixed Vegetables (roasted)
1 tbsp Parmesan Cheese
1 clove Garlic
1 tsp Olive Oil
1 tsp Mixed Herbs (Rosemary, Thyme, Oregano)
Salt & Pepper (to taste)
PREPARATION
Preheat the oven to 400°F.
Pat the chicken breast dry and season with salt, pepper, and mixed herbs.
Heat a skillet with olive oil over medium-high heat. Sear the chicken breast for 2 minutes on each side until golden.
Transfer the chicken to a baking dish and roast in the oven for 15-18 minutes until the internal temperature reaches 165°F.
Meanwhile, toss mixed vegetables with a drizzle of olive oil, salt, and pepper. Spread on a baking sheet and roast in the oven for about 15 minutes until tender.
In a small pan, sauté minced garlic in a little olive oil over low heat until fragrant. Add the garlic to the cooked whole wheat pasta along with Parmesan cheese and mix well.
Plate the roasted chicken alongside a serving of garlic Parmesan pasta and roasted vegetables.
Garnish with a sprinkle of extra herbs if desired and serve warm.
