PREPARATION
Pulse cauliflower florets in a food processor until they resemble rice-sized pieces, or use pre-made cauliflower rice.
Press the tofu lightly to remove excess moisture and then cut it into small cubes.
Heat sesame oil in a large nonstick skillet over medium-high heat. Add the minced garlic and sauté until fragrant.
Add the tofu cubes and stir-fry until the edges become golden and crispy.
Stir in the cauliflower rice and cook for 3-4 minutes until slightly tender.
Mix in the kimchi and continue to stir-fry for another 2 minutes to allow the flavors to meld.
Push the ingredients to one side of the skillet and crack the eggs on the empty side. Scramble the eggs until just set, then mix into the stir-fry.
