INGREDIENTS
5 oz Lean Ground Pork
100g Rice Noodles (cooked)
1/2 medium Red Bell Pepper (sliced)
1 cup Bok Choy (chopped)
1 clove Garlic
1 tsp grated Ginger
1 tbsp Low-Sodium Soy Sauce
1 tsp Sesame Oil
1 pinch Red Chili Flakes
2 tbsp chopped Scallions
PREPARATION
Prepare the rice noodles according to package instructions, then drain and set aside.
In a bowl, toss the 5 oz of lean ground pork with a pinch of red chili flakes.
Heat a non-stick skillet over medium-high heat and add the ground pork. Break it apart and cook until browned and almost cooked through.
Add the minced garlic, grated ginger, and sliced red bell pepper to the skillet. Sauté for 2-3 minutes until the garlic is fragrant and the pepper starts to soften.
Mix in the chopped bok choy and stir-fry for an additional 2 minutes until the greens begin to wilt.
Stir in the cooked rice noodles and drizzle the low-sodium soy sauce and sesame oil over the top. Toss everything together until well combined and heated through.
Finish by sprinkling chopped scallions on top and adjust seasoning with extra red chili flakes if desired before serving.
