Enjoy a vibrant dish featuring crispy, golden tofu paired with stir-fried Asian greens and protein-packed edamame. Each bite offers a delightful balance of textures and flavors, accented with a light ginger-soy dressing for an irresistible savory finish.
INGREDIENTS
300g Firm Tofu
100g Shelled Edamame
150g Bok Choy
1 Tbsp Cornstarch
1 tsp Olive Oil
1 Tbsp Soy Sauce
1 tsp Fresh Ginger
1 Garlic Clove
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
In a bowl, gently toss the tofu cubes with the cornstarch until evenly coated.
Heat the olive oil in a large non-stick skillet over medium-high heat. Once hot, add the tofu cubes and sear them until all sides are crisp and golden, about 3-4 minutes per side.
Meanwhile, heat another pan over medium heat and add a splash of water. Sauté the minced garlic and grated ginger for 1 minute, then add the bok choy. Stir-fry for 3-4 minutes until the greens are tender but still crisp.
In a small bowl, mix the soy sauce with a few spoonfuls of water. Once the tofu is crisp, drizzle the soy sauce mixture over the tofu in the skillet for an extra layer of flavor.
Add the shelled edamame to the bok choy, stirring briefly to warm them through.
Plate the crispy tofu alongside the stir-fried bok choy and edamame. Serve immediately and enjoy!
