INGREDIENTS
2 small boneless, skinless chicken thighs (85g each)
1 large egg
1 cup green beans
2 teaspoons olive oil
1 garlic clove
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt & pepper to taste
PREPARATION
- Preheat your oven to 400°F (200°C).
- Pat the chicken thighs dry and season with salt, pepper, dried thyme, and rosemary. Mince the garlic and rub it over the chicken for extra flavor.
- Place the seasoned chicken thighs on a baking sheet lined with parchment paper and drizzle with half of the olive oil.
- Bake the chicken for approximately 20-25 minutes, until the internal temperature reaches 165°F (74°C) and the edges are slightly crispy.
- While the chicken bakes, steam the green beans until tender but still crisp, about 5-7 minutes. Drizzle with the remaining olive oil and a pinch of salt.
- In a small saucepan, bring water to a boil and carefully add the egg to soft-boil it for about 6-7 minutes. Once done, place in cold water, peel, and slice.
- Plate the baked chicken thighs alongside the steamed green beans and garnish with slices of the soft-boiled egg.
- Serve immediately and enjoy your balanced, herb-infused dinner.
