Herb-Roasted Cauliflower Breadsticks with Garlic
Enjoy a savory twist on breadsticks made from roasted cauliflower, elevated with a blend of herbs and a rich, garlic-infused Greek yogurt dip. Crisp on the edges and tender on the inside, these breadsticks bring a delightful burst of flavor with every bite.
INGREDIENTS
1 cup Cauliflower (raw)
2 Large Eggs
1/3 cup Grated Parmesan Cheese
1 teaspoon Olive Oil
1 clove Minced Garlic
1/4 cup Nonfat Greek Yogurt
1 tablespoon Fresh Parsley
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F.
In a food processor, pulse the cauliflower until it resembles rice. Transfer to a microwave-safe bowl and microwave for 4-5 minutes until slightly softened. Let cool, then squeeze out excess moisture using a clean towel.
In a large bowl, combine the cauliflower, 2 beaten eggs, grated Parmesan cheese, olive oil, salt, and pepper. Mix until well integrated.
Transfer the mixture onto a parchment-lined baking sheet. Press the mixture evenly into a rectangular or square shape about 1/2 inch thick.
Bake in the preheated oven for 18-20 minutes or until the edges are golden and firm.
While the breadsticks are baking, prepare the garlic herb dip. In a small bowl, mix the nonfat Greek yogurt with minced garlic, chopped parsley, a pinch of salt and pepper.
Remove the breadsticks from the oven and cut them into strips. Serve warm with the garlic herb dip on the side.
