Enjoy a savory blend of herb-crusted pork chops seared to perfection, accompanied by creamy roasted garlic mashed potatoes. This dish features a delightful combination of aromatic herbs and a touch of crunch from whole-grain breadcrumbs paired with the smooth, comforting texture of mashed potatoes accented by roasted garlic and a hint of butter and milk.
INGREDIENTS
5 oz Pork Chop (Boneless, Center Loin)
1 Tbsp Whole-Grain Breadcrumbs
1 Tbsp Fresh Herbs (Thyme & Rosemary)
1 tsp Olive Oil
1 Roasted Garlic Clove
150g Potato
1/4 cup Nonfat Milk
1 tsp Butter
PREPARATION
Preheat your oven to 400°F for roasting the garlic along with preparing your mashed potatoes.
Place the garlic clove (with skin on) on a small piece of foil, drizzle with a tiny bit of olive oil, and wrap. Roast in the oven for 15-20 minutes until soft and fragrant.
Meanwhile, pat the pork chop dry. In a shallow dish, combine whole-grain breadcrumbs and finely chopped fresh herbs. Press the pork chop into the breadcrumb mixture to form a crust on both sides.
Heat olive oil in a skillet over medium-high heat. Once hot, carefully place the crusted pork chop in the pan and sear for 3-4 minutes on each side or until a golden crust forms and the internal temperature reaches 145°F.
While the pork is searing, peel the roasted garlic and mash it with the boiled or baked potato (pre-cooked until tender). Add nonfat milk and butter to the potatoes, mashing until smooth and creamy. Season with salt and pepper to taste.
Plate the pork chop alongside a generous serving of roasted garlic mashed potatoes. Serve immediately and enjoy!
