INGREDIENTS
4 oz Lean Ground Turkey
4 oz Lean Ground Beef
1 large Egg
1/4 cup Rolled Oats
1/4 cup chopped Onion
1 clove Garlic, minced
1 tsp Mixed Dried Herbs
1/2 medium Zucchini, sliced
1 medium Carrot, chopped
1/2 medium Red Bell Pepper, chopped
1 tsp Extra Virgin Olive Oil
PREPARATION
Preheat your oven to 375°F and lightly grease a small loaf pan and a baking sheet for the vegetables.
In a large mixing bowl, combine lean ground turkey, lean ground beef, egg, rolled oats, chopped onion, minced garlic, and dried herbs. Season with salt and pepper to taste.
Mix the ingredients gently until just combined and form the mixture into a loaf shape, placing it in the prepared loaf pan.
In a separate bowl, toss the sliced zucchini, chopped carrot, and red bell pepper with olive oil, and season lightly with salt and pepper.
Place the baking sheet with vegetables in the oven and roast for about 20-25 minutes, stirring halfway through.
At the same time, place the meatloaf in the oven and bake for 25-30 minutes or until the internal temperature reaches 165°F.
Once cooked, remove both the meatloaf and roasted vegetables from the oven, let the loaf rest for a few minutes before slicing, and serve a generous slice with a side of the roasted vegetables.
