INGREDIENTS
5.5 oz Salmon Fillet
6 spears Asparagus
1 cup Cauliflower florets
1/4 cup Nonfat Greek Yogurt
1 tsp Olive Oil
1/4 Lemon
Salt and Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt, pepper, and a light sprinkle of garlic powder if desired.
Heat olive oil in a non-stick skillet over medium-high heat. Once hot, add the salmon skin-side down and sear for about 3-4 minutes until a nice crust forms. Carefully flip and cook for another 3 minutes, or until the salmon reaches your desired doneness.
While the salmon is cooking, steam the asparagus until bright green and tender-crisp, about 4-5 minutes.
For the cauliflower mash, steam or boil the cauliflower florets until very tender, about 8-10 minutes. Transfer to a bowl, add the nonfat Greek yogurt and a squeeze of lemon juice, then mash until smooth. Season with salt and pepper to taste.
Plate the salmon alongside the asparagus and a generous scoop of cauliflower mash. Garnish with a little lemon zest or an extra drizzle of olive oil if desired and serve warm.
