INGREDIENTS
7 oz Wild Salmon Fillet
1 cup Asparagus
1 cup Cauliflower Florets
1/2 cup Plain Nonfat Greek Yogurt
1 tbsp Olive Oil
1 clove Garlic
1 tsp Unsalted Butter
PREPARATION
Pat the salmon dry with a paper towel and season with salt and pepper as preferred.
Heat olive oil in a non-stick skillet over medium-high heat. Once shimmering, place the salmon skin-side down and sear for about 4-5 minutes until golden. Flip and cook for an additional 3-4 minutes until desired doneness is reached.
Meanwhile, steam the asparagus in a steamer basket over boiling water for about 4-5 minutes until just tender but still crisp.
In a separate pot, bring water to a boil. Add the cauliflower florets and a clove of minced garlic, cooking until the cauliflower is very tender, approximately 8-10 minutes.
Drain the cauliflower and garlic, then return them to the pot. Add the Greek yogurt and unsalted butter, mashing until smooth and creamy. Season with salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous serving of garlic mashed cauliflower. Serve warm and enjoy.
