INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1 tsp Olive Oil
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Pat the salmon fillet dry and season both sides with salt and black pepper.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down (if available) and sear for about 3-4 minutes until a golden crust forms.
Flip the salmon and cook for an additional 3-4 minutes until it reaches your preferred doneness. Remove from heat and set aside.
While the salmon cooks, steam the asparagus in a steamer basket over boiling water for about 4-5 minutes until tender yet crisp.
For the cauliflower mash, steam the cauliflower florets until very tender, about 8-10 minutes. Transfer the steamed cauliflower to a blender or food processor.
Add 1 tsp of olive oil and a pinch of salt to the blender. Blend until smooth and creamy. Adjust seasoning to taste.
Plate the seared salmon alongside the steamed asparagus and a generous serving of cauliflower mash. Serve immediately.
