INGREDIENTS
5 oz Lean Ground Beef
1/2 medium Zucchini
1/2 medium Red Bell Pepper
1/2 cup Broccoli Florets
1 tsp Olive Oil
1 clove Garlic
1 tsp Fresh Thyme
1 tsp Dried Oregano
Salt and Black Pepper to taste
PREPARATION
Preheat your oven to 425°F. Line a baking sheet with parchment paper.
In a bowl, toss the chopped zucchini, red bell pepper, and broccoli with olive oil, a pinch of salt, black pepper, and half of the thyme and oregano.
Spread the vegetables evenly on the baking sheet. Roast in the oven for about 20-25 minutes until they start to become tender and golden.
While the vegetables roast, heat a skillet over medium heat. Add the ground beef, breaking it up with a spatula.
Add the minced garlic, remaining thyme, and oregano to the beef and season with salt and pepper. Cook until the beef is browned and fully cooked, about 7-10 minutes.
Once both the beef and vegetables are done, plate the beef and top with the roasted vegetables. Serve immediately.
