INGREDIENTS
6 oz Salmon Fillet
1 cup Fresh Asparagus
1 cup Cauliflower
1/4 cup Nonfat Greek Yogurt
1 tsp Olive Oil
1 tbsp Lemon Juice
1/4 tsp Garlic Powder
Salt and Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt, pepper, and a light dusting of garlic powder.
Heat a non-stick skillet over medium-high heat and add the olive oil. When hot, add the salmon fillet skin-side down and sear for about 3-4 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until the salmon is just cooked through. Squeeze lemon juice over the salmon in the last minute of cooking.
While the salmon cooks, steam the asparagus in a steamer basket over boiling water for 4-5 minutes until tender-crisp.
For the cauliflower mash, steam or boil the cauliflower until very tender (about 8-10 minutes). Drain and transfer to a bowl.
Mix in the nonfat Greek yogurt, a pinch of salt, pepper, and a splash of lemon juice. Mash until smooth and creamy.
Plate the seared salmon alongside the steamed asparagus and a serving of cauliflower mash. Garnish with extra lemon if desired and serve warm.
