1/2 link Turkey Sausage (28g)
1 cup Fresh Spinach (30g)
2 teaspoons Olive Oil
1/4 Avocado (50g)
1 slice Whole Grain Bread
Salt & Pepper to taste
PREPARATION
Preheat a non-stick skillet over medium heat.
Lightly coat the skillet with 1 teaspoon of olive oil.
Add the turkey sausage (using half a link) and sauté for 2-3 minutes until it starts to brown, then remove and slice it into rounds.
In the same skillet, add the fresh spinach and sauté for around 1-2 minutes until wilted. Remove the spinach and set aside.
Pour in the egg whites into the skillet and cook gently over medium heat, stirring occasionally.
