Savor the vibrant flavors of a tender herb-crusted salmon paired with a medley of colorful roasted vegetables. This dish offers aromatic herbs, zesty lemon, and a light drizzle of olive oil that elevate the natural taste of fresh produce for a wholesome and satisfying meal.
INGREDIENTS
4.5 ounces Salmon Fillet (128g)
100g Red Bell Pepper, chopped
100g Zucchini, sliced
100g Broccoli florets
1 tsp Olive Oil
Herb Mixture (Parsley, Dill, Lemon Zest) to taste
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper. Toss the red bell pepper, zucchini, and broccoli with half the olive oil, salt, and pepper to coat evenly. Spread them out in a single layer on the baking sheet.
In a small bowl, combine the herb mixture (parsley, dill, lemon zest) with a pinch of salt and pepper. Pat the salmon dry with a paper towel and brush lightly with the remaining olive oil. Press the herb mixture onto the top of the salmon fillet to form a crust.
Place the salmon fillet on the same baking sheet or a separate one if there's space, alongside the vegetables.
Bake in the preheated oven for about 12-15 minutes, or until the salmon flakes easily with a fork and the vegetables are tender and slightly charred at the edges.
Remove from the oven and let rest for a couple of minutes before serving. Enjoy your nutrient-packed meal!
