INGREDIENTS
5 oz Salmon Fillet
6 spears Asparagus
1 cup Cauliflower
1 tbsp Olive Oil
Seasonings (Salt, Pepper, Garlic Powder) to taste
PREPARATION
Season the salmon fillet with salt, pepper, and garlic powder on both sides.
Heat a non-stick skillet over medium-high heat. Once hot, add a small drizzle of olive oil and sear the salmon for about 3-4 minutes per side until a golden crust forms and the inside is just opaque.
While the salmon cooks, steam the asparagus in a steamer basket over simmering water for about 4-5 minutes until tender but still crisp.
For the cauliflower mash, chop the cauliflower into florets and boil in lightly salted water until very tender (approximately 8-10 minutes). Drain well.
Transfer the steamed cauliflower to a blender or use a potato masher. Add the olive oil (if desired, you can add an extra dash for creaminess) and blend or mash until you achieve a smooth consistency. Season with salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a serving of cauliflower mash. Serve immediately.
