The salmon is infused with subtle seasoning, while the potatoes are whipped to a smooth consistency with a hint of garlic, and the green beans are lightly dressed to highlight their vibrant freshness.
INGREDIENTS
7 oz Salmon Fillet
1 large Potato (300g)
1/2 cup Milk (2% reduced fat)
1 tbsp Unsalted Butter
2 cloves Garlic
1 cup Green Beans
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat a non-stick skillet over medium-high heat for the salmon and prepare a pot for boiling the potato.
Peel and cube the potato, then simmer in salted water until tender, about 15-20 minutes.
Meanwhile, season the salmon fillet with salt and pepper. Lightly score the skin side.
In the skillet, sear the salmon over medium-high heat, starting with the skin side down. Cook for about 4-5 minutes until a crispy crust forms, then flip and cook an additional 3-4 minutes until the salmon is almost cooked through.
For the mashed potatoes, drain the potatoes and return them to the pot. Add the minced garlic, butter, and milk, then mash until smooth. Season with salt and pepper to taste.
Steam the green beans until they are bright green and tender-crisp, about 5-7 minutes. Drizzle with olive oil and season lightly with salt and pepper.
Plate the seared salmon alongside a generous serving of garlic mashed potatoes and steamed green beans. Serve immediately and enjoy your balanced and nourishing dinner.
