INGREDIENTS
6 oz Salmon Fillet (170g)
1 cup Green Beans (125g)
1 clove Garlic (3g)
1 cup Cauliflower (107g)
1/4 cup Unsweetened Almond Milk (60g)
1 tsp Olive Oil (5g)
1 tsp Unsalted Butter (5g)
PREPARATION
Pat the salmon fillet dry and season lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat and add the olive oil.
Place the salmon fillet skin-side down (if applicable) and sear for about 3-4 minutes until a crispy crust forms, then flip and cook for another 3-4 minutes until the fish is just cooked through.
While the salmon cooks, steam or blanch the green beans until they are tender-crisp, about 4-5 minutes. In a small pan, sauté the minced garlic in a tiny bit of olive oil until fragrant and toss with the green beans.
For the cauliflower mash, steam the cauliflower until very tender, about 8-10 minutes. Transfer the cauliflower to a blender along with the unsweetened almond milk and unsalted butter. Blend until smooth and season with salt and pepper to taste.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Serve immediately while warm.
