INGREDIENTS
5 large egg whites (165g)
2 ounces turkey sausage (56g)
1/2 medium red bell pepper (75g)
1/2 cup raw spinach (15g)
1/2 cup sliced white mushrooms (35g)
1/4 cup diced onion (40g)
2 teaspoons extra virgin olive oil (9g)
1/4 medium avocado (50g)
1 slice whole grain bread (30g)
PREPARATION
Preheat a non-stick skillet over medium heat and add 2 teaspoons of olive oil.
Dice the bell pepper, onion, and slice the mushrooms. Rinse the spinach if needed.
Slice the turkey sausage into rounds or crumble it loosely if preferred.
Add the diced onions, bell pepper, and mushrooms to the skillet and sauté until softened, about 3-4 minutes.
Add the turkey sausage to the pan and cook until heated through and slightly browned.
Pour in the egg whites and gently stir to mix with the veggies and sausage. Continue cooking until the egg whites are set, about 3-4 minutes.
While the scramble finishes cooking, toast the slice of whole grain bread.
Plate the scramble, and top or serve on the side with quartered avocado. Serve with the toasted bread.
