Savor a beautifully seared salmon paired with crisp, steamed asparagus and a silky, creamy cauliflower mash enhanced with a touch of Greek yogurt. A harmonious plate balancing rich flavors and delicate textures for a healthful, elegant dinner.
INGREDIENTS
6 oz Salmon Fillet
100g Asparagus
150g Cauliflower
1 tsp Olive Oil
1 tbsp Plain Nonfat Greek Yogurt
Pinch of Salt
Pinch of Black Pepper
Pinch of Garlic Powder
PREPARATION
Pat the salmon dry and season both sides with salt, black pepper, and garlic powder.
Heat a non-stick skillet over medium-high heat and add the olive oil.
Sear the salmon skin-side down (if applicable) for about 3-4 minutes, then flip and cook for an additional 3-4 minutes until just cooked through.
While the salmon is searing, steam the asparagus in a steamer basket over boiling water for about 4-5 minutes until tender-crisp.
For the cauliflower mash, steam or boil the cauliflower florets until very tender, about 8-10 minutes. Drain well.
Transfer the cauliflower to a blender or use a hand masher; add the Greek yogurt, a pinch of salt and pepper, and blend or mash until smooth.
Plate the seared salmon with a side of steamed asparagus and a generous portion of cauliflower mash. Serve warm.
