INGREDIENTS
7 oz Salmon Fillet
1 cup Green Beans
2 Garlic Cloves
1/2 tsp Olive Oil
1 cup Cauliflower
1 tsp Unsalted Butter
Salt and Pepper to taste
PREPARATION
Season the salmon fillet with salt and pepper.
Preheat a non-stick skillet over medium-high heat. Once hot, add the salmon skin-side down and sear for about 4-5 minutes per side until cooked to your liking.
While the salmon is cooking, trim and rinse the green beans. Mince the garlic cloves.
In a small pan, add the 1/2 teaspoon of olive oil and sauté the minced garlic for 30 seconds. Add the green beans and sauté for 3-4 minutes until tender-crisp. Season with salt and pepper.
Steam the cauliflower florets until very tender, about 8-10 minutes. Transfer to a bowl and mash with 1 teaspoon of unsalted butter. Season with salt and pepper to taste.
Plate the seared salmon alongside the garlic green beans and a generous scoop of mashed cauliflower. Serve warm.
