7 oz Salmon Fillet
1 medium Sweet Potato (approx 125g)
6 Asparagus Spears
1 tbsp Olive Oil
1 tbsp Lemon Juice
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry with paper towels and season both sides with salt, pepper, and a sprinkle of garlic powder if desired.
Heat a non-stick skillet over medium-high heat and add 1/2 tbsp of olive oil. Once hot, place the salmon skin-side down (if applicable) and sear for about 3-4 minutes until a golden crust forms.
Flip the salmon and sear the other side for another 3-4 minutes until cooked to your desired doneness. Remove from heat and drizzle with lemon juice.
Meanwhile, peel and cube the sweet potato. Boil in lightly salted water until tender, about 10-12 minutes, then drain and mash with a fork. Add the remaining 1/2 tbsp olive oil, salt, and pepper to taste.
Steam the asparagus by placing them in a steamer over boiling water for about 3-4 minutes until they are crisp tender.
