INGREDIENTS
3 large Yellow Onions (450g)
1 tsp Olive Oil (4.5g)
2 cloves Garlic (12g)
4 cups Vegetable Broth (960g)
1 tsp Fresh Thyme
1 Bay Leaf
3 oz Grilled Chicken Breast (85g)
PREPARATION
Thinly slice the onions and mince the garlic.
Heat the olive oil in a large pot over medium-low heat.
Add the onions and cook slowly, stirring occasionally, until they are deeply caramelized and softened, about 20-25 minutes.
Stir in the minced garlic and cook for an additional 1-2 minutes.
Pour in the vegetable broth and add the fresh thyme and bay leaf. Increase the heat to bring the mixture to a gentle simmer, then reduce heat and simmer for 10 minutes to allow flavors to meld.
While the soup simmers, grill the chicken breast until fully cooked and slightly charred. Once cooled, slice or shred the chicken.
Remove the bay leaf from the soup, serve the hot soup in bowls and top each serving with grilled chicken.
Season with salt and pepper to taste.
