Roasted Garlic Butter Mushrooms with Chicken
Savor the rich flavors of tender mushrooms and succulent chicken breast glazed in a roasted garlic butter sauce, finished with fresh parsley. This dish harmoniously balances the earthiness of mushrooms with lean protein for a satisfying meal that's both comforting and nutritious.
INGREDIENTS
8 oz Button Mushrooms
4 oz Chicken Breast
2 tbsp Unsalted Butter
3 Garlic Cloves
2 tbsp Fresh Parsley
0.5 tsp Salt
0.25 tsp Black Pepper
PREPARATION
Preheat your oven to 400°F.
Clean the mushrooms and slice them if desired. Cut the chicken breast into bite-size strips.
In a skillet over medium-high heat, melt 1 tablespoon of butter. Add the chicken breast strips, season lightly with salt and pepper, and sauté until they are just cooked through, about 4-5 minutes. Remove chicken and set aside.
In the same skillet, add the remaining butter and add minced garlic. Sauté garlic for about 1 minute until fragrant.
Add the mushrooms to the skillet, tossing to coat them in the garlic butter. Season with a pinch of salt and pepper.
Transfer the mushrooms (and any accumulated juices) into an oven-safe dish. Roast in the preheated oven for 10 minutes, stirring halfway through, until the mushrooms are tender and starting to caramelize.
Once roasted, add the sautéed chicken strips back into the dish and toss to combine.
Garnish with freshly chopped parsley before serving.
