Enjoy a vibrant bowl of crispy tofu peanut noodles tossed with fresh, crunchy veggies and an aromatic blend of ginger, garlic, and soy-lime dressing. The combination of extra-firm tofu, edamame, and a drizzle of smooth peanut butter creates a satisfying meal that's both light and protein-packed.
INGREDIENTS
250g Extra-Firm Tofu
2 oz dry Rice Noodles
1 tbsp Peanut Butter
1/4 cup Shelled Edamame
100g Mixed Veggies (Carrots & Red Bell Pepper)
1 clove Garlic
1 tsp Ginger
1 tbsp Soy Sauce
1 tbsp Lime Juice
PREPARATION
Press the extra-firm tofu for at least 15 minutes to remove excess moisture, then cut into 1-inch cubes.
Cook the rice noodles according to package instructions until al dente. Drain and set aside.
In a non-stick pan, lightly sauté the tofu over medium-high heat until all sides are golden and crispy.
While the tofu cooks, prepare the peanut sauce by whisking together peanut butter, soy sauce, lime juice, minced garlic, and grated ginger in a bowl.
Toss the cooked noodles with the peanut sauce in a large mixing bowl until evenly coated.
Gently fold in the crispy tofu, shelled edamame, and julienned mixed veggies.
Serve immediately and enjoy the balance of crunchy tofu, creamy peanut sauce, and fresh vegetables.
