INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
1/4 cup Nonfat Plain Greek Yogurt
1/2 teaspoon Olive Oil
1 Garlic Clove
Salt and Pepper to taste
PREPARATION
- Pat the salmon fillet dry and season lightly with salt and pepper.
- Heat a non-stick skillet over medium-high heat and add the olive oil.
- Place the salmon in the skillet, skin-side down if applicable, and sear for about 3-4 minutes per side until a golden crust forms and the salmon is almost cooked through.
- In a separate pan, steam or lightly boil the green beans until tender-crisp, about 4-5 minutes.
- In the last minute of cooking the green beans, add the minced garlic and toss to combine, allowing the garlic to soften and infuse the beans with flavor.
- Meanwhile, steam the cauliflower until tender (about 8-10 minutes). Transfer the cauliflower to a bowl, add the Greek yogurt, and mash until smooth. Season with salt and pepper to taste.
- Plate the seared salmon alongside the garlic green beans and a generous serving of cauliflower mash and serve immediately.
