1 tbsp Peanut Butter
1 tsp Low-Sodium Soy Sauce
1 tsp Olive Oil
1 tbsp Lime Juice
1 clove Garlic, minced

PREPARATION

- Pat the shrimp dry and season lightly with a pinch of salt if desired.
- Cube the tofu into bite-sized pieces.
- In a small bowl, mix the peanut butter, lime juice, and soy sauce until smooth. Add a teaspoon of water if needed to thin the sauce.
- Heat the olive oil in a large non-stick skillet or wok over medium-high heat. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
- Add the shrimp to the skillet and stir-fry for 2-3 minutes until they turn pink and are nearly cooked through.
- Toss in the tofu cubes and gently stir-fry for another 2 minutes to heat through.
- Add the cooked rice noodles and pour the tangy peanut-lime sauce over the mixture. Toss everything together carefully to ensure that the sauce coats all ingredients evenly.
- Serve warm and enjoy your vibrant, nutrient-packed stir-fry.
