Indulge in tender, perfectly seared salmon paired with crisp garlic green beans and a smooth, creamy cauliflower mash. This dish is both satisfying and balanced, offering vibrant flavors alongside a nourishing, healthful profile.
INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
1 tsp Olive Oil
2 cloves Garlic
1 Lemon wedge
Salt and Pepper to taste
PREPARATION
- Pat the salmon fillet dry with a paper towel and season with salt and pepper on both sides.
- Heat a non-stick skillet over medium-high heat. Once the pan is hot, add the salmon fillet skin-side down and sear for 3-4 minutes, then flip and cook for another 3-4 minutes until desired doneness is reached.
- In a separate pan, add a touch of olive oil and sauté the minced garlic until fragrant. Add the green beans and stir-fry for about 4-5 minutes until they are tender-crisp. Season with salt and pepper.
- Meanwhile, steam the cauliflower florets until tender. Transfer to a bowl and mash with a fork or immersion blender. Stir in a teaspoon of olive oil, and season with salt and pepper.
- Plate the seared salmon, then arrange the garlic green beans on the side, and finish with a generous spoonful of cauliflower mash. Squeeze a lemon wedge over the salmon for a bright finish.
