INGREDIENTS
5 oz Salmon Fillet
1 cup cooked Brown Rice
1 cup Fresh Green Beans
2 tbsp Extra Virgin Olive Oil
2 Garlic Cloves
1/2 Lemon
Salt & Pepper to taste
PREPARATION
- Season the salmon fillet with salt and pepper on both sides.
- Heat 1 tablespoon of extra virgin olive oil in a nonstick skillet over medium-high heat.
- Sear the salmon fillet skin-side down for about 3-4 minutes, then flip and cook for an additional 2-3 minutes until it is just cooked through. Remove from skillet and set aside.
- In the same skillet, add the remaining olive oil and minced garlic. Sauté briefly until fragrant, taking care not to burn the garlic.
- Add the fresh green beans to the skillet, season with a pinch of salt and pepper, and sauté for 5-6 minutes until they are tender-crisp.
- Meanwhile, if not already prepared, cook the brown rice according to package instructions.
- Plate the brown rice, top with the garlic green beans, and place the seared salmon fillet on the side.
- Finish by drizzling a little lemon juice over the salmon, and serve warm.
