PREPARATION
- Preheat your oven to 425°F. 
- Cut the sweet potato into 1-inch cubes and toss with half the olive oil, salt, and pepper. 
- Place the sweet potato cubes on a baking sheet and roast for 10 minutes. 
- Meanwhile, season the chicken breast with salt, pepper, chopped rosemary, and thyme. 
- After 10 minutes, push the sweet potatoes to one side of the baking sheet and add the chicken breast. 
- Drizzle the chicken with a little olive oil and place the baking sheet back in the oven. Roast for 15-20 minutes or until the chicken reaches an internal temperature of 165°F and the sweet potatoes are tender. 
- In the last 8-10 minutes of roasting, toss the green beans with a splash of olive oil, salt, and pepper, then add them to the baking sheet on the cleared side. 
- Once everything is cooked and slightly crispy, remove from the oven and let rest for a few minutes before serving.
