Start your day with a light yet satisfying scramble that balances the fluffy texture of egg whites with a whole egg’s richness, paired with lean turkey sausage and tender, garlicky sautéed spinach. This dish offers a gentle, savory warmth perfect for fueling your morning without weighing you down.
INGREDIENTS
4 large egg whites (approx. 120g)
1 whole egg (approx. 50g)
1 turkey sausage link (approx. 45g)
1 cup fresh spinach (approx. 30g)
1 teaspoon olive oil (approx. 5g)
Salt and pepper to taste
PREPARATION
- Crack the egg whites into a bowl and add the whole egg. Whisk together until well combined.
- Heat a non-stick skillet over medium heat and add the turkey sausage. Slice it into bite-sized pieces and sauté until lightly browned.
- Remove the turkey sausage from the skillet and set aside. In the same skillet, add the teaspoon of olive oil.
- Add the fresh spinach to the skillet and sauté until just wilted, around 1 to 2 minutes. Season lightly with salt and pepper.
- Pour the egg mixture into the skillet with the spinach. Allow the eggs to set for a few seconds, then gently stir, incorporating the sautéed spinach evenly.
- Add the cooked turkey sausage pieces back into the skillet. Continue to scramble the eggs until fully cooked but still moist, about 2 to 3 minutes.
- Season with additional salt and pepper if needed, and serve warm.
