1/2 cup cooked Brown Rice
1 cup steamed Asparagus
1 tbsp Lemon Juice

PREPARATION
- Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper. 
- Drizzle the salmon with olive oil and a squeeze of lemon juice. 
- Heat a non-stick skillet over medium-high heat. Once hot, add the salmon skin-side down and sear for about 3-4 minutes until the skin is crispy. 
- Carefully flip the salmon and cook the other side for an additional 3-4 minutes, or until the salmon is cooked to your desired doneness. 
- While the salmon cooks, prepare the brown rice as per package instructions if not pre-cooked. Aim for 1/2 cup when served. 
- Steam the asparagus for about 4-5 minutes until tender but still crisp. 
- Plate the seared salmon alongside the steamed asparagus and brown rice. Optionally, drizzle a little extra lemon juice over the asparagus to enhance the flavors.
