1 cup Green Beans
150 g Cauliflower

2 tsp Olive Oil
2 cloves Garlic

PREPARATION
- Pat the salmon fillet dry, then season both sides with salt and pepper. 
- Heat a non-stick skillet over medium-high heat and add 1 teaspoon of olive oil. 
- Place the salmon fillet in the skillet skin-side down (if applicable) and sear for about 3-4 minutes per side until nicely browned and just cooked through. 
- Meanwhile, steam the green beans until tender-crisp, about 4-5 minutes. In a separate small pan, heat the remaining 1 teaspoon of olive oil with minced garlic over medium heat, then toss the cooked green beans in the garlic oil and season with salt and pepper. 
- For the cauliflower mash, steam or boil the cauliflower until very tender, about 8-10 minutes. Drain and transfer to a bowl. Add the nonfat Greek yogurt, a pinch of salt and pepper, and mash until smooth. Adjust seasoning as desired.
