200g Extra Firm Tofu
1 tbsp Hummus
1 slice Low-Fat Swiss Cheese
50g Red Bell Pepper
50g Zucchini
50g Eggplant
20g Baby Spinach
0.5 tsp Olive Oil
PREPARATION
- Press the tofu to remove excess moisture, then slice it into 1/2-inch thick pieces. 
- Preheat your grill or grill pan over medium heat. Lightly brush tofu slices with a little olive oil and season with salt and pepper if desired. 
- Grill the tofu for about 3-4 minutes per side until grill marks appear. 
- While tofu is grilling, slice the red bell pepper, zucchini, and eggplant into thin strips. Toss the vegetables with a drizzle of olive oil and a pinch of salt. 
- Grill the vegetables for 2-3 minutes per side until they are tender and have a slight char. 
- Lightly toast the whole grain bread slices on the grill for extra crunch. 
- Spread a thin layer of hummus on one side of each bread slice. Layer the grilled tofu, vegetables, baby spinach, and then the low-fat Swiss cheese on one slice. 
- Top with the other bread slice, press down slightly, slice in half if desired, and serve immediately.
