- While the beans steam, break the cauliflower into florets and blanch in boiling water for 3-4 minutes until soft. Drain well. 
- In a blender or using a fork, mash the cauliflower with the remaining olive oil, garlic, a pinch of salt, and pepper until creamy but still retaining some texture. 
- Plate the seared salmon alongside a serving of garlic-infused cauliflower mash and green beans. Serve immediately.
