INGREDIENTS
8 oz Salmon Fillet
1 cup Green Beans
1/2 cup Brown Rice (cooked)
1 tsp Olive Oil
1 Garlic Clove
1 Lemon Wedge
Salt and Black Pepper to taste
PREPARATION
- Rinse the salmon fillet and pat dry. Season both sides lightly with salt and pepper.
- Cook the brown rice according to package instructions. Set aside once done.
- Heat a non-stick skillet over medium-high heat. Add the salmon fillet skin-side down (if applicable) and sear for about 4-5 minutes per side, or until the fish is opaque and flakes easily.
- While the salmon is cooking, heat 1 teaspoon of olive oil in a separate pan over medium heat. Add the sliced garlic clove and sauté briefly until fragrant.
- Add the green beans to the garlic oil and toss to coat. Sauté for 4-5 minutes until they are tender-crisp, adding a pinch of salt and pepper.
- Plate the cooked brown rice as a base, place the seared salmon fillet on top, and arrange the garlic green beans beside it.
- Finish with a squeeze of fresh lemon juice over the salmon and green beans. Serve immediately.
