1 slice Cheddar Cheese
PREPARATION
- Preheat your grill or grill pan over medium-high heat. 
- Slice the vegetables (zucchini, bell peppers, and red onion) into even pieces, brush lightly with olive oil, and season with salt and pepper. 
- Grill the vegetables for about 4-5 minutes on each side until tender and slightly charred. 
- While the vegetables are grilling, heat the chickpea patty on the grill until it’s warm and has grill marks, about 3-4 minutes per side. 
- Slice the tofu into 1/4-inch thick pieces and grill for 2-3 minutes per side until lightly browned. 
- Toast the whole grain bread slices on the grill for a minute or two until crusty. 
- Spread hummus on one side of each bread slice. 
- Layer the grilled vegetables, chickpea patty, grilled tofu, and finally the cheddar cheese slice onto one of the bread slices. Top with the second slice, hummus-side down, and press lightly.
