1 cup Asparagus
1 tsp Olive Oil (for asparagus)
1 cup Cauliflower
1 tsp Olive Oil (for mash)
Salt and Pepper to taste
1 tsp Garlic Powder
PREPARATION
- Preheat the oven to 400°F. 
- Trim the asparagus ends and toss the asparagus in 1 teaspoon of olive oil, salt, and pepper. Spread them on a baking sheet. 
- Roast the asparagus in the oven for about 10-12 minutes until tender and slightly crispy. 
- While the asparagus roasts, season the salmon fillet with salt, pepper, and garlic powder. 
- Heat a non-stick skillet over medium-high heat. Once hot, add the seasoned salmon fillet skin-side down (if applicable) and sear for about 3-4 minutes until a golden crust forms. 
- Flip the salmon and cook for an additional 3-4 minutes until it reaches your desired doneness. 
- Steam the cauliflower florets until very tender, about 8-10 minutes. 
- Transfer the steamed cauliflower to a bowl and mash it using a fork or immersion blender. Stir in 1 teaspoon of olive oil, and season with salt and pepper to taste. 
- Plate the seared salmon along with a serving of roasted asparagus and a scoop of cauliflower mash. Serve warm and enjoy!
