INGREDIENTS
5 oz Salmon Fillet
1/2 cup roasted Sweet Potato
1 cup Green Beans
1 tbsp chopped Pitted Dates
1 tsp Extra Virgin Olive Oil
1/2 tsp Low-Sodium Soy Sauce
1/2 tsp Orange Juice
Salt and Pepper to taste
PREPARATION
- Preheat your oven to 425°F. Line a baking sheet with parchment paper.
- In a small bowl, combine the chopped dates, low-sodium soy sauce, and orange juice to create the sticky glaze.
- Place the salmon fillet on a separate lined baking tray. Season with salt and pepper, then brush half of the glaze over the top.
- Toss the sweet potato cubes and green beans with the olive oil, salt, and pepper, then spread them out on the prepared baking sheet.
- Roast the vegetables in the oven for about 20 minutes, stirring halfway through for even cooking.
- Place the salmon in the oven during the last 12-15 minutes of vegetable roasting. Brush with the remaining glaze halfway through cooking.
- Once the salmon is flaky and the vegetables are tender and slightly crisp, remove from the oven. Plate the salmon alongside the roasted sweet potatoes and green beans.
- Drizzle any remaining glaze over the salmon before serving.
