PREPARATION
Preheat the oven to 425°F.
Peel and cube the sweet potato into bite-sized pieces. Toss with a light drizzle of olive oil, salt, and pepper. Spread evenly on a baking sheet and roast in the oven for about 20-25 minutes until tender and slightly crispy on the edges.
While the sweet potato roasts, dice the red bell pepper and small onion.
