INGREDIENTS
4 oz Chicken Breast
0.75 cup Golden Sweet Potato Gnocchi
1 cup Baby Spinach
1 Garlic Clove
1 tsp Olive Oil
Salt, to taste
Black Pepper, to taste
PREPARATION
Season the chicken breast with a pinch of salt and black pepper.
Heat a nonstick skillet over medium-high heat and add the chicken breast. Sear for about 5-6 minutes per side until cooked through and golden on the outside. Remove from the skillet and let it rest.
In the same skillet, add the olive oil and minced garlic, stirring continuously for about 30 seconds until fragrant.
Add the golden sweet potato gnocchi to the skillet, tossing gently so that they become lightly coated and begin to brown, about 3-4 minutes.
Add the baby spinach to the skillet. Cook, stirring frequently, until the spinach is just wilted, about 1-2 minutes.
Slice the chicken breast and serve it atop the gnocchi and spinach mixture.
Finish with an extra pinch of salt and black pepper if desired.
