Chicken Sausage and Sweet Potato Hash with Sautéed Spinach
A hearty breakfast hash featuring savory chicken sausage paired with tender sweet potato cubes, complemented by a bed of lightly sautéed spinach and a touch of egg white for extra protein. Finished with a hint of butter, this dish delivers a satisfying morning meal that’s both nutrient-packed and full of flavor.
INGREDIENTS
2 Chicken Sausage Links (approx. 170g total)
100g Sweet Potato, diced
1 cup Fresh Spinach
1 large Egg White
1 tsp Butter
PREPARATION
Dice the sweet potato into small cubes. If using raw sweet potato, steam or microwave until slightly tender, about 3-4 minutes.
Slice the chicken sausage links into rounds.
In a nonstick skillet over medium heat, add the sausage slices and cook until lightly browned, about 3-4 minutes.
Add the diced sweet potato to the skillet and continue cooking with the sausage, stirring occasionally, for an additional 5 minutes or until the sweet potato cubes are tender and edges begin to crisp.
Push the hash to one side of the skillet. In the cleared space, add the butter and allow it to melt, then add the egg white. Scramble it gently until just cooked, then mix with the hash.
Add the fresh spinach to the skillet and sauté with the hash until just wilted, about 1-2 minutes.
Season with your favorite spices or a pinch of salt and pepper if desired, then serve warm.
