INGREDIENTS
5 oz Salmon Fillet
1/2 cup Canned Black Beans (rinsed)
1 cup Okra
2 oz Mango, diced
1 tsp Olive Oil
1 tsp Jerk Seasoning
1 tsp Ground Cumin
1 tsp Ground Coriander
1 tbsp Lime Juice
PREPARATION
- Pat the salmon dry and season both sides with jerk seasoning. Let it rest for a few minutes.
- Preheat a non-stick skillet over medium-high heat with olive oil.
- Sear the salmon skin-side down for about 3-4 minutes until you get a nice crust, then sear the other side for another 3-4 minutes until cooked through but still moist.
- While the salmon is cooking, heat the black beans in a small pan. Stir in the ground cumin, ground coriander, and lime juice. Allow them to warm through on low heat for 3-4 minutes.
- Toss the okra with a pinch of salt and a drizzle of olive oil, then roast in a preheated oven at 425°F for 10 minutes until tender and slightly crispy.
- Plate the salmon alongside a serving of spiced black beans, arrange the roasted okra around the plate and sprinkle diced mango over the beans as a fresh, fruity accent.
- Serve immediately and enjoy the fusion of Caribbean and Soul flavors.
