INGREDIENTS
6 oz Salmon Fillet
1 cup Fresh Green Beans
1 cup Cauliflower Florets
1 tsp Olive Oil (for salmon)
1 tsp Olive Oil (for green beans)
2 cloves Garlic, minced
Salt and Pepper to taste
PREPARATION
Season the salmon fillet with salt and pepper on both sides.
Heat 1 teaspoon of olive oil in a skillet over medium-high heat. Add the salmon fillet skin-side down (if applicable) and sear for about 3-4 minutes per side until the exterior is crisp and the interior is cooked to your liking.
While the salmon is cooking, steam the cauliflower florets until tender, about 8-10 minutes.
Transfer the steamed cauliflower to a bowl and mash with a fork or potato masher. Add a pinch of salt, pepper, and if desired, a small drizzle of olive oil to enrich the mash.
In another pan, heat the remaining teaspoon of olive oil on medium heat. Sauté the minced garlic for 30 seconds until fragrant, then add the fresh green beans. Cook them for about 4-5 minutes until they are tender-crisp, stirring occasionally.
Plate the seared salmon alongside a generous serving of garlic green beans and a smooth portion of cauliflower mash. Serve immediately and enjoy!
