Enjoy a wholesome and flavorful dinner where lean turkey breast is seared to perfection and paired with tender steamed green beans and a smooth, lightly seasoned sweet potato mash. The dish is finished with a drizzle of olive oil and a squeeze of lemon, creating an inviting blend of savory and slightly sweet notes.
INGREDIENTS
8 oz Turkey Breast
1 cup Green Beans
1.5 medium Sweet Potato
1 tsp Olive Oil
2 cloves Garlic
1 tbsp Lemon Juice
Salt & Pepper to taste
PREPARATION
Pat the turkey breast dry and season both sides with salt and pepper.
Preheat a skillet over medium-high heat with 1 tsp of olive oil. Add 2 lightly crushed garlic cloves and let infuse the oil.
Sear the turkey breast for about 4-5 minutes per side until golden brown and cooked through. Remove from heat and let rest.
While the turkey cooks, peel and cube the sweet potato. Boil in lightly salted water until tender, about 12-15 minutes.
Steam the green beans until they are crisp-tender, about 5-7 minutes. Drain and season with a pinch of salt.
Drain the sweet potatoes and mash until smooth. Stir in 1 tbsp lemon juice, and season with salt and pepper to taste.
Plate the sliced turkey breast alongside a serving of sweet potato mash and steamed green beans. Drizzle any remaining pan juices and a touch more lemon juice over the dish if desired.
